VARIETY

Judor, Pink Lady and Reineta apples. With Quince.

METHOD

Short maceration of the apples before press.

2 weeks maceration with crushed quince before a second press.

Aged with its soft lees for a year. Bottled by hand. 

3 months in stainless steel.

Ancestral method.

TASTING NOTES

Citric, refreshing and light. Nice, crisp bubble.

FOOD PAIRING

Fried courgette flowers with honey mustard.
