VARIETY
Reineta, Grannay Smith, Fuji, Gala, Pink Lady and Golden apples.
With Peach and Habaneros.
METHOD
Short maceration of 12 hours of the peaches and apples before press.
After the fermentation, 1 week of infusion with habanero chilli.
Bottled by hand.
Ancestral Method. Second fermentation in bottle.
TASTING NOTES
Dry cider with acidity and a spicy aftertaste. Complex fruit and spice notes due to the peaches and habaneros.
FOOD PAIRING
Barbecued honey-mustard chicken wings, or some fried mushrooms.
