It's texture is characterized by its density, Greek type.
Calaveruela is perhaps one of the most conscious projects we know with the welfare of their sheep. The sheep graze freely on the Monte Olivete farm, a pasture full of holm oaks where they also sow the cereals and fodder that their animals consume.
This third generation dedicated to agriculture and livestock, has already two producing different dairy, all of them produced from raw sheep milk and through a completely artisanal process. As we already know, sheep’s milk is beneficial for its high content of vitamins, iron, calcium, phosphorus, sodium or zinc and is also much more digestible than cow’s milk cheese.
Undoubtedly, the quality of Calaveruela’s milk translates into cheeses and yogurts made with care and dedication that, as they say, concentrate the territory where it is produced, the landscape and its people.
