Method
In the vineyard, they completely avoid using copper and sulfur. Overripe grapes undergo a 28-day maceration period in stainless steel tanks. Following completion of the malolactic fermentation, the wine is transferred to old French oak barrels, leaving space at the top to interact with oxygen and the lees. Before bottling, there is no filtration or clarification of the wine.
Tastes like
Vanilla, tofu, and wood with a sweet aftertaste, full-bodied. It resembles a liquor, reminiscent of brandy. The aroma is a blend of caramel, cigar, and vanilla.
