Method
First harvest in August, grapes destemmed and pressed. Second harvest of manto negro is made in an optimal state of maturation, it is peeled and fermented, also with a minimum of intervention. Once the fermentation is finished, the grape paste is drained and pressed by hand very gently. Finally the two wines are mixed.
