Method
First harvest in August, grapes destemmed and pressed. The Second harvest of manto negro is made in an optimal state of maturation, it is peeled and fermented, also with a minimum of intervention. Once the fermentation is finished, the grape paste is drained and pressed by hand very gently. Finally, the two wines are mixed.

Fresh Mediterranean wine, with notes of red fruits, wild strawberries and raspberries

Red pepper and roasted white garlic sourdough bread, toasted with warm sheep butter and mango chutney

Microcellar Son Crespí has been in the family since 1528 upholding a strong link with Mallorcan tradition.
