Style: Aromatic, complex, and flavorful aged white wine with balsamic notes 

Vineyard: Paraje El Romano. Dry-farmed organic inland vineyard at 800 m, goblet trained. Clay-limestone soils.

Production:

Manual harvest with cluster selection. Macabeo harvested in early September. Fermentation in barrels for a total of 100 days. Tardana in mid-October, fermented in stainless steel. After blending, it remains in barrels with its lees for 10 months.
