Vineyard: Selection of old bush vines +100 years old, abandoned vineyards in recovery: El Orillon, Las Casillas, Casa Lázaro, Los Morenos

Elaboration: 

Recovery project for abandoned vineyards due to exhaustion and low yield.

Manual harvest with bunch selection. 20% enters with stems and the remaining 80% is destemmed. Not crushed. Spontaneous fermentation. Daily manual oxygenation. Spontaneous malolactic fermentation. Aging in 400L bocoy of various uses for just under a year. Bottled unfiltered and unfined.

Total production: 3500 bottles.
