Manual harvesting of bunches at optimal ripeness, with several passes through the vineyard over 2 months. Sun-drying of bunches to naturally achieve desired sugar levels. Manual pressing. Free, spontaneous, very slow fermentation in barrels.

Cabeceo wine. Blend of vintages.
