Vineyard:

On a slope facing the Mediterranean Sea at 1300 m altitude, slate soils.

Winemaking:

Manual harvest in mid-November. Destemming and direct pressing. Fermentation in stainless steel for almost two years to allow for the lowest possible residual sugar. Aging in old barrels for another two years.
