Vineyard: Certified organic. On terraces among olive and carob trees. Clay-loam soils.

Elaboration:

Manual harvest. Selection of bunches in the field. Whole bunches enter without destemming. Spontaneous fermentation in large wooden vats. 10 months aging. Unfiltered and unfined.

Total production: 500 bottles.
