Ramón Saavedra produces natural wines in the heart of the Sierra Nevada mountains in Granada, at 1,200 meters above sea level. The extreme temperatures—hot days and cold nights—result in slow grape ripening and high acidity. Cauzón Tinto is made with Tempranillo grapes grown in clay and sandy soils, macerated with the skins for eight days, and aged for six months in stainless steel.
Tasting notes
Violet, strawberry, and pomegranate. It's reminiscent of fresh juice, with notes of red fruit and black pepper, and hints of natural yogurt.
Pairing
Sushi, tuna stew, grilled sardines, mackerel and pizzas with tomato.
About the producer
Ramón Saavedra, head of Bodega Cauzón, grew up among the family vineyards, making wine solely for his own consumption. He never imagined a professional career in winemaking, so he trained as a chef. However, he eventually took over the family vineyard and expanded it with new plots in the Sierra Nevada mountains. Since 1999, he has cultivated his vines without chemicals. In the winery, he prioritizes simplicity and absolute respect for the grapes: only native yeasts, no filtering, no additives, not even sulfites. His wines express with complete purity the character of the landscape he loves.
