El Calar cheeses are made exclusively with raw goat's milk. An extremely artisanal process results in soft, luxuriously creamy and smooth cheeses. This type of pressed paste cheeses stand out for their strong aromatic personality with more intense flavors as the maturation process progresses.

All El Calar cheeses are artisanal. Due to this the cheese never comes with an exact weight even if the same mold is used every time. The cure, the pressure exerted, the variety, cause subtle variation of grams in the final weight. Thus the reason why we indicate that the weight of these pieces is "approximate"
