IL MIG by Onima
IL MIG is all about the tension of being in the middle. Oil and vinegar inherently hate each other so they pull in two different directions. Something about contrast is always exciting so I wanted to embrace their different paths.
The two are brought together by heaps of barley koji, shallots, and garlic which are all slowly caramelized over the fire to give a deep savory quality. It wasn’t necessary to make this sauce overly-spicy so I chose to use two relatively mild peppers: red jalapeño and a Spanish cayenne variety.
The consistency of this sauce is luxuriously smooth and works well in many applications.
