METHOD

Direct press. Double fermentation with wild yeasts.

20 days maceration with Cascade & Willamett dry hops.

Ancestral method. Second fermentation in the bottle.

TASTING NOTES

Soft cider with hoppy, floral, grassy notes and a bitter aftertaste.

FOOD PAIRING

Green olives with hummus, a cashew cheese dip or charcuterie board.
