MALSON by Onima
MALSON was conceived with Spain’s Moorish history in mind. I wanted to use spices brought from Africa pre-14th century and incorporate them into a modern all-use hot sauce.
Roasted red peppers and carrots provide just enough sweetness to balance mod- erately spicy yellow habanero grown in Granada and a myriad of aromatic pollens, flowers, seeds, and roots from the umbellifer family. (caraway, cumin, coriander, fennel, dill, etc).
The final result needed brightness which was achieved by the addition of lemon peel and ginger kombucha.
